The mixture is then filtered to obtain a creamy and delicious horchata. It’s perfect to sip at any time of the year, but especially good on a hot summer day.

When it comes to Asian desserts, the inutak may be one of the lesser known, but it’s still a delicious treat. It’s a Filipino candy made from rice cakes baked in sweetened coconut milk, often with ube yam powder, to make it purple, until it’s lightly caramelized on the outside. Then, it is served in glasses with a scoop of vanilla ice cream or ube. Funny anecdote: uselessak comes from the Tagalog root “utak” which means brain, first because it has the same consistency and secondly that when it is grilled, the top rises upwards and takes the shape of a brain . In this delicious cream sundae, apples are mixed with bananas for a fresh apple frozen dessert that’s as delicious as it is unexpected. It’s then topped with a warm homemade caramel sauce and chopped peanuts, for a delicious treat that tastes like crunching into a caramel apple. This sundae consists of vanilla coconut ice cream, a salty chocolate sauce, pine nuts, flowers and a few dates filled with fresh cashew butter. Seriously, I made the cashew butter while the ice was thawing. Needless to say, it was delicious! I shouldn’t have eaten it all but… well, you know me.

My experiments and my use of semolina in pastry are ongoing. After baking breads with semolina, now they are cakes. The semolina also gives beautiful textures to the cakes. The coconut semolina or Basbousa cake that was baked last week had a soft crumb and excellent texture. This Namita Tiwari semolina and coconut cake is dipped in sweet syrup, this cake is very easy to make.
